Michael Clough, Executive Chef.
Executive Chef Michael Clough, born and raised in New Hampshire, is a graduate of the New England Culinary Institute. He joined Palladio Restaurant in 2012 to be then promoted to Sous-Chef in 2015 and Executive Chef in 2020 . His respect for the broadest diversity of local ingredients, mostly produced on our farm, is the basis of a famously self-effacing command of technique, and is the exact mirror of our winemaker's reverence for our fruit. The consequence is a series of dishes bold and yet subtle, articulate and texturally complex, of memorable beginning, middle and end.

Sommelier Professionista Alessandro Medici.
Sommelier Professionista Alessandro Medici was invited by Gianni and Silvana Zonin to come to Palladio from their summer estate in Tuscany. In Alessandro an easy graciousness of welcome is personified as the rarity it has always been. Seldom have so much learning in viticulture and breeding in hospitality been so amiably concealed by such a smiling acceptance of responsibility, for every guest’s dining pleasure. His knowledge of every wine on his list begins, in each case, with budbreak on the vine and is sustained by persistent cellar tastings. Alessandro invites friends of Palladio to write to him with any question about pairing our wines at the restaurant, or with dishes to be served at home. Email Alessandro.

Sam Bowen in one of Palladio’s kitchen gardens.
Horticulturist Sam Bowen is responsible for all the landscaping and grounds in our visitor areas, from the Inn and Cottages to the decorative plantings and blooms at the terraces outside the Tasting Rooms and Palladio Restaurant. In addition, he collaborates with Michael Clough for our kitchen gardens to produce a continuous seasonal flow of artisanal quality herbs, vegetables, and edible flowers, often rare, to distinguish our menus throughout the year.

Winemaker Luca Paschina discussing wine with restaurant guests.
Palladio frames and projects the facets of the vineyard’s wines, which are intended in the winemaking of Luca Paschina precisely for this culinary consummation. Luca inherits on his mother’s side the depth of background in culinary practice that he inherits in viticulture on his father’s side. His participation in Palladio’s fruition reflects a rare technical versatility, therefore, but also a reverence for every ingredient of the meal.
