There is no official dress code at Palladio. However, most gentlemen guests tend to wear a jacket and/or tie and ladies generally wear pants, skirts or dresses at dinner. At lunch, dress is smart casual.
Palladio translates the culinary art
by revealing individual virtuosity
in the most eloquent harmony.
Executive Chef Spencer Crawford, born and raised in Central Virginia, is a graduate of Johnson and Wales and since a young age has been attracted to food and the great Virginia outdoors. His respect for the broadest diversity of local ingredients, mostly produced on our farm, is the basis of a famously self-effacing command of technique, and is the exact mirror of our winemaker's reverence for our fruit. The consequence is a series of dishes bold and yet subtle, articulate and texturally complex, of memorable beginning, middle and end.
Sommelier Professionista Alessandro Medici was invited by Gianni and Silvana Zonin to come to Palladio from their summer estate in Tuscany. In Alessandro an easy graciousness of welcome is personified as the rarity it has always been. Seldom have so much learning in viticulture and breeding in hospitality been so amiably concealed by such a smiling acceptance of responsibility, for every guest’s dining pleasure. His knowledge of every wine on his list begins, in each case, with budbreak on the vine and is sustained by persistent cellar tastings. Alessandro invites friends of Palladio to write to him with any question about pairing our wines at the restaurant, or with dishes to be served at home. Email Alessandro.
Robert Sacilotto, our full-time horticulturist, came to us from Monticello’s Center for Historic Plants and brings prodigious independent experience from his flourishing private nurseries of herbs, culinary flowers and vegetables. A taste of a single one of his corn shoots, or a section of one of his artisan radishes, can inspire Chef Spencer’s entire kitchen staff to the most elegant platings of his culinary designs.
Palladio frames and projects the facets of the vineyard’s wines, which are intended in the winemaking of Luca Paschina precisely for this culinary consummation. Luca inherits on his mother’s side the depth of background in culinary practice that he inherits in viticulture on his father’s side. His participation in Palladio’s fruition reflects a rare technical versatility, therefore, but also a reverence for every ingredient of the meal.
