Cabernet Sauvignon2017

Cabernet Sauvignon

A Cabernet Sauvignon bred on the vine and in the winery for early approachability, the wine nevertheless evolves in bottle to repay patience in its consumption. Because of its vivid fruit and moderate concentration of tannins, its food pairing range is broader than expected, while still giving great satisfaction especially with rich red meats and game.

Cellar Life

The 2016 growing season greatly reduced our yields across the board, due to costly April frosts and much crop-thinning during a rainy next two months, before becoming ideal for the final 60 days of sunny, warm, dry weather for ripening all our grapes, and the reds especially. In October, however, Cabernet Sauvignon had to be picked a few days before reaching optimal, Reserve quality. The resulting harvest presents a young-drinking wine, very well structured but of shorter cellar life.
